Ingredients
  

For the Teriyaki Sauce:

  • ½ cup soy sauce
  • ¼ cup mirin Japanese sweet rice wine
  • ¼ cup sake or substitute with dry sherry or rice vinegar
  • 3 tablespoons brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch optional, for thickening

For the Chicken:

  • 4 boneless skinless chicken breasts, sliced into thin strips
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Sesame seeds and chopped green onions for garnish (optional)
  • Cooked white rice for serving

Instructions
 

  • Prepare the Teriyaki Sauce:
    In a small saucepan, combine the soy sauce, mirin, sake, brown sugar, garlic, and ginger. Stir well to combine.
    Place the saucepan over medium heat and bring the mixture to a simmer. Let it cook for 5-7 minutes, stirring occasionally, until the sauce has slightly thickened and the flavors have melded together.
    If you prefer a thicker sauce, you can mix the cornstarch with a tablespoon of water to make a slurry, then gradually stir it into the sauce. Cook for an additional 1-2 minutes until the sauce has thickened to your desired consistency. Remove from heat and set aside.
  • Prepare the Chicken:
    Season the chicken strips with salt and pepper on both sides.
    In a large skillet or wok, heat the vegetable oil over medium-high heat.
    Add the seasoned chicken strips to the skillet in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side, or until the chicken is golden brown and cooked through.
    Once the chicken is cooked, reduce the heat to medium-low and pour the teriyaki sauce over the chicken in the skillet. Stir to coat the chicken evenly with the sauce.
    Continue cooking for an additional 1-2 minutes, allowing the sauce to heat through and glaze the chicken.
  • Serve:
    Transfer the teriyaki chicken to a serving platter and sprinkle with sesame seeds and chopped green onions, if desired, for garnish.
    Serve the teriyaki chicken hot over cooked white rice, with extra sauce spooned over the top if desired.
