  • 8 ounces rice noodles
  • 2 cups cooked chicken breast shredded or sliced
  • 1 cup red cabbage thinly sliced
  • 1 cup carrots julienned
  • 1 red bell pepper thinly sliced
  • 1 cucumber thinly sliced
  • 3 green onions sliced
  • ¼ cup fresh cilantro chopped
  • ¼ cup roasted peanuts chopped

Peanut Sauce

  • ½ cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 teaspoons fresh ginger grated
  • 2 cloves garlic minced
  • 2 to 4 tablespoons warm water
  • 1 teaspoon sriracha optional

Instructions
 

Step 1: Cook the noodles

  • Bring a large pot of water to a boil. Cook the rice noodles according to package instructions until tender. Drain and rinse under cold water to stop cooking. Set aside.
