Ingredients
  

  • 2 cups cherry tomatoes halved
  • 2 cups cucumber diced (about 2 medium cucumbers)
  • 1 cup fresh mozzarella balls bocconcini, halved
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh basil leaves torn
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon dried oregano

Instructions
 

  • Prepare the Vegetables and Cheese:
    Halve the cherry tomatoes and place them in a large mixing bowl.
    Dice the cucumbers into bite-sized pieces and add them to the bowl.
    Halve the fresh mozzarella balls and add them to the bowl.
    Thinly slice the red onion and add it to the bowl.
    Tear the fresh basil leaves into small pieces and sprinkle them over the salad ingredients.
  • Make the Dressing:
    In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, salt, and pepper. If using, add the dried oregano for an extra layer of flavor.
  • Toss the Salad:
    Pour the dressing over the salad ingredients in the mixing bowl.
    Gently toss everything together until the vegetables and mozzarella are evenly coated with the dressing.
  • Season and Serve:
    Taste the salad and adjust the seasoning with more salt and pepper if needed.
    Transfer the salad to a serving dish and serve immediately, or let it sit for about 10-15 minutes to allow the flavors to meld together.

Notes
