Ingredients
  

  • 3 ripe bananas
  • cup melted coconut oil
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ¼ cup plant-based milk almond, oat, or soy
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup vegan chocolate chips plus extra for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment paper.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add the melted coconut oil, brown sugar, maple syrup, plant-based milk, and vanilla extract to the mashed bananas. Mix well.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix!
  • Fold in the vegan chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle a few extra chocolate chips on top.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
