Ingredients
  

Dry ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Wet ingredients:

  • 1 cup apple cider reduced to 1/4 cup
  • 2 large eggs
  • 6 tablespoons unsalted butter melted
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup buttermilk
  • 1 teaspoon vanilla extract

For coating:

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

Reduce the apple cider:

  • Pour 1 cup of apple cider into a small saucepan.
  • Simmer over medium heat until reduced to 1/4 cup (about 15-20 minutes).
  • Set aside to cool completely.

Prepare the dry ingredients:

  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Mix the wet ingredients:

  • In another bowl, combine the cooled cider reduction, eggs, melted butter, sugars, buttermilk, and vanilla extract.

Make the batter:

  • Gradually add the wet ingredients to the dry, mixing until just combined.
  • Be careful not to overmix.

Prepare for baking or frying:

  • For baking: Preheat oven to 350°F (175°C) and grease a donut pan.
  • For frying: Heat oil in a heavy-bottomed pot to 350°F (175°C).

Cook the donuts:

  • If baking: Fill each donut cavity about 3/4 full and bake for 10-12 minutes.
  • If frying: Carefully drop or pipe batter into the oil and fry for 1-2 minutes per side.

Prepare the coating:

  • Mix 1/2 cup sugar with 1 teaspoon cinnamon in a shallow bowl.

Finish the donuts:

  • While still warm, toss each donut in the cinnamon-sugar mixture.
