  • 1 cup Baileys Irish Cream plus more for drizzling, optional
  • 16 oz cream cheese softened
  • 1 ½ cups powdered sugar
  • 2 cups heavy whipping cream
  • 8 oz dark or semi-sweet chocolate chopped (for ganache)
  • ½ cup heavy cream for ganache
  • ½ cup crushed chocolate cookies or chocolate cake for layering

Instructions
 

Prepare the Cheesecake Layer

  • In a large mixing bowl, beat cream cheese and powdered sugar until smooth and creamy.
  • Gradually add Baileys Irish Cream while mixing until fully incorporated and smooth.
  • In a separate bowl, whip heavy whipping cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until well combined. Set aside.

Make the Chocolate Ganache Layer

  • In a small saucepan, heat 1/2 cup heavy cream until it starts to simmer.
  • Remove from heat and pour over the chopped chocolate in a heatproof bowl.
  • Let it sit for about 1 minute, then whisk until smooth and glossy. Allow it to cool slightly before layering.

Assemble the Trifle

  • In a trifle dish or individual glasses, start with a layer of crushed chocolate cookies or cake as the base.
  • Add a layer of the Baileys cheesecake mixture, spreading it evenly.
  • Drizzle a layer of the chocolate ganache over the cheesecake layer.
  • Repeat the layers until you reach the top of the dish, ending with a cheesecake layer.

Garnish and Chill

  • Top the trifle with whipped cream and drizzle with additional Baileys if desired.
