  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the Filling:

  • ¾ cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon cornstarch

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk adjust as needed for consistency
  • ½ teaspoon vanilla extract
  • Optional: Sprinkles for decoration

Instructions
 

Make the Dough

  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.

Prepare the Filling

  • In a small bowl, mix together the brown sugar, cinnamon, and cornstarch. This creates a rich, gooey filling that stays in place while baking.

Assemble the Cookies

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Roll out the chilled dough on a lightly floured surface to about ¼-inch thickness.
  • Use a round cookie cutter (about 3 inches in diameter) to cut out circles of dough.
  • Place a teaspoon of the brown sugar cinnamon filling in the center of half the circles. Top each with another circle of dough and gently seal the edges by pressing with a fork.

Bake to Perfection

  • Arrange the cookies on the prepared baking sheets, leaving about 2 inches of space between them.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Add the Glaze

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle the glaze over the cooled cookies. If desired, sprinkle with colorful sprinkles for a fun, Pop-Tart-inspired touch.
