Ingredients
  

  • 1 pound ground beef or mix of beef and pork
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 medium head of cabbage chopped (about 8 cups)
  • 2 14.5 oz cans diced tomatoes
  • 1 15 oz can tomato sauce
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • ½ cup uncooked long-grain white rice
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper optional
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, brown the ground meat over medium-high heat. Drain any excess fat.
  • Add diced onions and minced garlic to the pot. Sauté until the onions are translucent.
  • Stir in the chopped cabbage, diced tomatoes, tomato sauce, and tomato paste. Mix well.
  • Add the rice, beef broth, and your chosen herbs and spices. Bring the mixture to a boil.
  • Reduce heat, cover, and simmer for about 25-30 minutes, or until the rice and cabbage are tender.
  • Taste and adjust seasoning as needed. Add a splash of lemon juice or a dollop of sour cream for extra flavor if desired.
