  • 8 oz pasta spaghetti, bucatini, or rigatoni work best
  • 2 tbsp olive oil extra virgin for the best flavor
  • 3 cloves garlic minced
  • 1-2 tbsp Calabrian chili paste adjust to your spice preference
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan or Pecorino Romano
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Optional:

  • Cherry tomatoes, lemon zest, or anchovies for extra depth

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil and cook the pasta until al dente.
  • Reserve 1/2 cup of pasta water before draining.

Step 2: Sauté the Garlic and Chilies

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and cook for 30-60 seconds until fragrant.
  • Stir in Calabrian chili paste, letting it infuse the oil for about a minute.

Step 3: Combine Pasta and Sauce

  • Add the cooked pasta directly into the skillet.
  • Pour in reserved pasta water to help create a silky sauce.
  • Toss everything together and cook for 1-2 minutes until the sauce evenly coats the pasta.

Step 4: Finish with Cheese and Herbs

  • Remove from heat and stir in grated Parmesan.
  • Adjust seasoning with salt and black pepper.
  • Garnish with fresh basil or parsley for an extra burst of flavor.
