  • 12 ounces pasta rotini, penne, or bowtie
  • 1 ½ cups cherry tomatoes halved
  • 8 ounces fresh mozzarella diced or use mozzarella balls
  • ½ cup fresh basil chopped or torn
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

For the Balsamic Glaze:

  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down quickly and prevent sticking.

Step 2: Prepare the Ingredients

  • While the pasta cools, halve the cherry tomatoes, chop or tear the basil leaves, and dice the mozzarella (or use whole mini mozzarella balls).

Step 3: Make the Balsamic Glaze

  • In a small saucepan over medium heat, combine the balsamic vinegar and honey (or brown sugar). Bring to a simmer and let it reduce until it thickens slightly, about 5-7 minutes. Remove from heat and let it cool.

Step 4: Assemble the Salad

  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil. Drizzle with olive oil and season with salt and pepper. Toss gently to coat everything evenly.

Step 5: Add the Balsamic Glaze
