Ingredients

For the Cookies

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 1 stick unsalted butter, softened
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

For the Buttercream Filling (Option 1)

  • ½ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk if needed for consistency

For the Chocolate Ganache Filling (Option 2)

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

Prepare the Cookie Dough

  • Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugars: In a large bowl, beat softened butter with brown and granulated sugars until light and fluffy (about 2-3 minutes).
  • Add Wet Ingredients: Add the egg and vanilla extract to the butter-sugar mixture and beat until smooth.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Add Chocolate Chips: Fold in the chocolate chips.
  • Chill the Dough: Cover and refrigerate the dough for at least 30 minutes for best results.

Bake the Cookies

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Portion the Dough: Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them about 2 inches apart.
  • Bake: Bake for 10-12 minutes, or until the edges are golden and the centers are slightly soft.
  • Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Prepare the Filling

    Buttercream Filling (Option 1):

    • Beat softened butter in a bowl until creamy.
    • Gradually add powdered sugar and vanilla extract, and beat until smooth.
    • If the mixture is too thick, add milk a little at a time until spreadable.

    Chocolate Ganache Filling (Option 2):

    • Heat heavy cream in a small saucepan over medium heat until just steaming (do not let it boil).
    • Pour hot cream over chocolate chips in a bowl. Let it sit for 1-2 minutes, then stir until smooth and creamy.
    • Allow ganache to cool to room temperature so it thickens slightly before assembling.

    Assemble the Cookie Sandwiches

    • Pair Cookies: Match up cookies of similar sizes for even sandwiches.
    • Add Filling: Use a spoon or piping bag to add about 1-2 tablespoons of filling to the flat side of one cookie.
    • Sandwich Together: Place another cookie on top, pressing gently to spread the filling.

    Serve and Store

    • Serve Immediately: Enjoy your cookie sandwiches fresh for the best texture.
    • Store: Place in an airtight container at room temperature for up to 3 days, or freeze individually for up to 1 month.
