Ingredients
  

For the Brownies:

  • ½ cup 1 stick unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Strawberry Layer:

  • 1 lb 450g fresh strawberries, hulled and sliced

For the Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions
 

  • Prepare the Brownies:
    Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
    In a medium bowl, combine the melted butter and granulated sugar. Stir until well combined.
    Add the eggs and vanilla extract to the bowl and mix until smooth.
    Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined; do not overmix.
    Pour the batter into the prepared baking pan and spread it evenly.
    Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
    Allow the brownies to cool completely in the pan.
  • Prepare the Strawberry Layer:
    While the brownies are cooling, hull and slice the strawberries.
    Once the brownies have cooled, arrange the sliced strawberries evenly over the top of the brownies.
  • Prepare the Chocolate Ganache:
    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
    Place the chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate chips and let it sit for 2-3 minutes.
    Stir the mixture until the chocolate is completely melted and the ganache is smooth.
  • Assemble the Brownies:
    Pour the chocolate ganache over the layer of strawberries, spreading it evenly to cover all the strawberries.
    Allow the ganache to set at room temperature for about 1 hour or refrigerate for 30 minutes until firm.
  • Serve:
    Once the ganache has set, cut the brownies into squares and serve.
    Optionally, garnish with additional strawberry slices or a dusting of powdered sugar.

Notes

  • Do Not Overmix: Overmixing the brownie batter can result in tough brownies. Mix until just combined.
  • Cool Completely: Ensure the brownies are completely cool before adding the strawberry layer to prevent the strawberries from wilting.
  • Chill the Ganache: If you’re in a hurry, refrigerate the brownies after adding the ganache to set it more quickly.
  • Ganache Consistency: If the ganache is too thick, add a bit more warm cream and stir until smooth. If it’s too thin, let it cool slightly before pouring over the strawberries.
  • Use Fresh Strawberries: Fresh, ripe strawberries will give the best flavor and texture. Avoid using frozen strawberries as they can release too much liquid.
