Ingredients
  

  • 9 oz cheese tortellini refrigerated or frozen
  • ½ lb ground Italian sausage mild or spicy
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes optional, for heat

Instructions
 

Brown the Sausage

  • In a large skillet over medium heat, cook the ground sausage until browned and cooked through. Drain excess fat and transfer sausage to a plate.

Sauté the Garlic

  • In the same skillet, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant.

Add Liquid and Tortellini

  • Stir in the heavy cream and chicken broth. Add the tortellini and bring the mixture to a gentle simmer.

Cook the Tortellini

  • Cover and cook for 5–7 minutes, or until the tortellini are tender and heated through. Stir occasionally.

Add Sausage and Spinach

  • Return the sausage to the skillet. Add baby spinach and stir until wilted, about 1–2 minutes.

Add Cheese and Seasoning

  • Stir in Parmesan cheese, Italian seasoning, salt, and pepper. Add red pepper flakes if using. Let the sauce simmer for 1–2 minutes to thicken.

Serve

  • Spoon into bowls and top with extra Parmesan or red pepper flakes if desired. Serve hot.
