Ingredients
  

  • 4 cups diced apples Granny Smith or Honeycrisp work well
  • ¼ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 12-15 egg roll wrappers
  • Oil for frying or cooking spray for baking

Instructions
 

  • In a saucepan, combine apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until apples are soft, about 5-7 minutes.
  • Add cornstarch and cook for an additional 2 minutes until the mixture thickens. Let cool.
  • Place an egg roll wrapper on a clean surface, diagonal like a diamond.
  • Spoon about 2 tablespoons of the apple mixture onto the lower third of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides.
  • Roll tightly, sealing the top corner with a bit of water.
  • For frying: Heat oil to 350°F and fry rolls for 2-3 minutes until golden brown.
  • For baking: Preheat oven to 400°F, spray rolls with cooking spray, and bake for 15-20 minutes, flipping halfway through.

Notes

Pro tip: To achieve the perfect crispy texture, make sure your oil is hot enough before frying, or if baking, don't overcrowd the baking sheet!
