Ingredients

  • 4 large Russet or Yukon Gold potatoes ideal for crisping in the oven
  • 2 tablespoons olive oil or melted butter for rich flavor and golden edges
  • 1 cup shredded cheese cheddar, mozzarella, or a mix of your favorites
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder – optional for a savory kick

Optional toppings:

  • cooked bacon bits, green onions, sour cream, chives

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Wash and slice the potatoes into even 1/4-inch thick rounds. Uniform slices bake more evenly.
  • Soak the slices in cold water for 15–30 minutes (optional but helps remove starch for extra crispiness).
  • Drain and pat dry thoroughly with a clean kitchen towel.
  • Toss slices in olive oil, salt, pepper, and garlic powder until evenly coated.
  • Arrange in a single layer on the baking sheet, making sure they don’t overlap.
  • Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
  • Remove from oven and sprinkle shredded cheese over each slice.
  • Broil on high for 1–3 minutes, just until the cheese is melted and bubbly.
  • Garnish and serve. Add toppings like bacon bits, green onions, or a dollop of sour cream.
