Wash and slice the potatoes into even 1/4-inch thick rounds. Uniform slices bake more evenly.
Soak the slices in cold water for 15–30 minutes (optional but helps remove starch for extra crispiness).
Drain and pat dry thoroughly with a clean kitchen towel.
Toss slices in olive oil, salt, pepper, and garlic powder until evenly coated.
Arrange in a single layer on the baking sheet, making sure they don’t overlap.
Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
Remove from oven and sprinkle shredded cheese over each slice.
Broil on high for 1–3 minutes, just until the cheese is melted and bubbly.
Garnish and serve. Add toppings like bacon bits, green onions, or a dollop of sour cream.
