Instructions
Step 1: Preheat oven
Preheat your oven to 425°F (218°C). Line a baking sheet or pizza stone with parchment paper.
Step 2: Rice the cauliflower
Cut the cauliflower into florets. Pulse in a food processor until it resembles rice (about 4 cups).
Step 3: Cook the cauliflower
Microwave the riced cauliflower in a large microwave-safe bowl for 5–6 minutes until soft. Let it cool.
Step 4: Remove moisture
Transfer the cauliflower to a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible. You should remove at least 1/2 to 3/4 cup of water.
Step 5: Make the dough
In a large mixing bowl, combine the cauliflower, mozzarella, Parmesan, egg, garlic powder, oregano, salt, and pepper. Mix until fully combined.
Step 6: Shape the crust
Place the dough on the prepared baking sheet and press into a thin, even circle about 1/4 inch thick.
Step 7: Bake the crust
Bake for 20–25 minutes or until the crust is golden brown and firm.
Step 8: Add toppings and finish baking
Remove from oven, add desired toppings, and return to the oven for 8–10 minutes or until cheese is melted and bubbly.
