Ingredients
  

  • 1 lb chicken breast diced or shredded
  • cup Buffalo sauce adjust based on spice preference
  • 8 large lettuce leaves romaine, iceberg, or butter lettuce
  • ¼ cup diced celery
  • ¼ cup shredded carrots
  • ¼ cup crumbled blue cheese optional
  • Ranch or blue cheese dressing optional, for drizzling
  • Salt and pepper to taste
  • ½ tsp garlic powder optional, for seasoning chicken

Instructions
 

Season and Cook the Chicken

  • Prepare the Chicken: Season diced chicken with salt, pepper, and garlic powder (if using).
  • Cook the Chicken: Heat a skillet over medium heat. Add a little olive oil or cooking spray if needed, then add the chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked (no longer pink inside).

Add Buffalo Sauce

  • Coat the Chicken: Pour the Buffalo sauce over the cooked chicken. Stir to coat the chicken evenly and let it cook for an additional 2-3 minutes until the sauce thickens slightly.

Prepare the Lettuce Wraps

  • Wash and Dry Lettuce: Rinse lettuce leaves and pat them dry. Choose large leaves that can hold the filling well.
  • Assemble the Wraps: Spoon Buffalo chicken into each lettuce leaf.
