Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 oz 225 g fresh mozzarella cheese, sliced
  • 2 medium tomatoes thinly sliced
  • 8 –10 fresh basil leaves
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper

Optional:

  • 2 tbsp balsamic glaze for drizzling

Instructions
 

Prepare the Chicken:

  • Preheat your oven to 375°F (190°C).
  • Butterfly the chicken breasts: Slice each breast horizontally without cutting all the way through. Open the chicken like a book.
  • Season both sides of the chicken with salt, pepper, and Italian seasoning.

Stuff the Chicken:

  • Layer 1–2 slices of mozzarella, 1–2 slices of tomato, and 2–3 basil leaves inside each butterflied chicken breast.
  • Close the chicken and secure it with toothpicks to prevent the filling from spilling out during cooking.

Sear the Chicken:

  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Add the stuffed chicken breasts and sear for 2–3 minutes per side until golden brown.

Bake the Chicken:

  • Transfer the skillet to the preheated oven.
  • Bake for 20–25 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).

Serve:

  • Remove toothpicks carefully.
  • Drizzle with balsamic glaze if desired.
  • Serve hot with your favorite sides.
