Ingredients
  

For the Peanut Sauce:

  • ¼ cup peanut butter creamy or crunchy
  • 3 tablespoons soy sauce or tamari for a gluten-free option
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon maple syrup or honey
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon sriracha or red pepper flakes adjust to taste
  • 2 –4 tablespoons water to adjust consistency

For the Stir Fry:

  • 8 ounces noodles rice noodles, ramen, or spaghetti
  • 1 red bell pepper thinly sliced
  • 1 cup shredded carrots
  • 1 cup broccoli florets or snap peas
  • 2 green onions chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup crushed peanuts for garnish
  • 1 tablespoon oil vegetable, avocado, or sesame

Instructions
 

Cook the Noodles

  • Bring a pot of water to a boil and cook the noodles according to the package instructions.
  • Drain and rinse under cold water to stop the cooking process. Toss with a little sesame oil to prevent sticking.

Make the Peanut Sauce

  • In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, garlic, ginger, and sriracha.
  • Add water gradually until the sauce reaches a smooth, pourable consistency.

Stir Fry the Vegetables

  • Heat a large pan or wok over medium-high heat.
  • Add oil and sauté the bell pepper, carrots, and broccoli for 3-4 minutes until slightly tender but still crisp.

Combine Everything

  • Add the cooked noodles and peanut sauce to the pan with the vegetables.
  • Toss everything together, ensuring the noodles are evenly coated in the sauce.

Garnish & Serve

  • Remove from heat and top with green onions, cilantro, and crushed peanuts.
  • Serve warm and enjoy.
