Ingredients

  • 4 links Italian sausage sweet, spicy, or chicken/turkey
  • 3 bell peppers - red, yellow, green sliced
  • 1 large onion yellow or red – sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes optional, for heat

Instructions

  • Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil for easy cleanup.
  • Slice the peppers and onions into uniform strips so they roast evenly.
  • Cut the sausage into bite-sized pieces or leave them whole if preferred.
  • Toss everything in olive oil and season with salt, pepper, garlic powder, and oregano.
  • Spread in a single layer on the sheet pan, leaving space between pieces for roasting (not steaming).
  • Roast for 25-30 minutes, tossing halfway through, until the vegetables are caramelized and sausage is browned.
  • Pro Tip: For a crispier finish, broil during the last 2–3 minutes of cooking.
