Ingredients
  

  • 8 large flour tortillas
  • 8 large eggs
  • ½ cup milk optional, for creamier scrambled eggs
  • 8 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup frozen hash browns cooked
  • ½ cup bell pepper diced and sautéed
  • ½ cup onion diced and sautéed
  • 1 tablespoon olive oil or butter for cooking
  • Salt and pepper to taste

Instructions
 

Cook the bacon

  • In a skillet over medium heat, cook bacon until crisp. Transfer to a paper towel-lined plate and crumble once cooled.

Sauté the vegetables

  • In the same skillet, add olive oil (if needed) and sauté diced bell pepper and onion until softened. Set aside.

Cook the hash browns

  • Prepare hash browns according to package instructions until golden and crisp. Set aside.

Scramble the eggs

  • In a bowl, whisk eggs with milk, salt, and pepper. Scramble in a nonstick skillet over medium heat until cooked through but still soft. Remove from heat.

Warm the tortillas

  • Warm tortillas for 10–15 seconds in the microwave to make them pliable.

Assemble the burritos

  • Lay each tortilla flat. Divide eggs, bacon, cheese, hash browns, and sautéed veggies evenly among the 8 tortillas.

Wrap the burritos

  • Fold in the sides, then roll tightly from the bottom up. Wrap each burrito in foil or parchment paper.

Freeze

  • Place wrapped burritos in a freezer-safe bag or container. Label and freeze for up to 3 months.

To reheat (microwave method)

  • Unwrap the foil, wrap in a paper towel, and microwave for 1–2 minutes per side, flipping halfway.
