Gingerbread Snowball Cookies are the perfect blend of classic snowball cookies and warm gingerbread spices. These festive cookies have a melt-in-your-mouth texture, with flavors of ginger, cinnamon, and cloves.With their powdered sugar coating, they look just like little snowballs - ideal for holiday gatherings, cookie swaps, or gifting.
Preheat your oven to 350°F and line two cookie sheets with parchment paper.
Step 2:
Using an electric mixer, beat the butter until it’s light and fluffy, about 20 seconds. Add the powdered sugar, vanilla, salt, cinnamon, ginger, nutmeg, allspice, cloves, and molasses. Mix everything until it’s smooth and well combined.
Next, add the flour. It might look crumbly at first, but keep mixing - it will come together into a soft cookie dough. This can take a few minutes, so be patient!
Step 3:
Scoop out 1 tablespoon of dough for each cookie and place them on the prepared cookie sheets.
Step 4:
Bake for 10–12 minutes, just until the bottoms of the cookies are lightly brown. Remove them from the oven and let them cool for a minute, just until they’re cool enough to handle.
Pour some extra powdered sugar into a small bowl and roll the warm cookies in the sugar until fully coated. Place the cookies on a cooling rack. Once they’ve cooled completely, you can roll them in powdered sugar again for an extra snowy finish.
