Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 4-6 Italian sausages sweet or spicy, sliced into rounds
  • 2 bell peppers red, yellow, or green, sliced
  • 1 red onion sliced
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 8-10 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley chopped, for garnish

Instructions
 

  • Preheat the Grill:
    Preheat your grill to medium-high heat, around 375-400°F (190-200°C).
  • Prepare the Marinade:
    In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, dried oregano, red pepper flakes (if using), salt, and pepper. This will be the marinade for both the shrimp and sausage.
  • Marinate the Shrimp and Sausage:
    Place the shrimp and sausage slices in separate bowls. Pour half of the marinade over the shrimp and the other half over the sausage. Toss to coat evenly and let them marinate while you prepare the vegetables.
  • Prepare the Vegetables:
    In a large bowl, toss the sliced bell peppers, red onion, zucchini, yellow squash, and cherry tomatoes with the remaining marinade until evenly coated.
  • Assemble the Skewers:
    Thread the marinated shrimp, sausage slices, and vegetables onto skewers, alternating between ingredients. If using wooden skewers, make sure to soak them in water for about 30 minutes before threading to prevent burning.
  • Grill the Skewers:
    Place the assembled skewers on the preheated grill. Cook for about 4-5 minutes per side, or until the shrimp is pink and opaque, the sausage is cooked through, and the vegetables are tender and slightly charred.
  • Serve:
    Remove the skewers from the grill and transfer them to a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the grilled shrimp and sausage.
