Ingredients
  

For the Honey Chipotle Chicken:

  • 1 lb boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce finely chopped
  • 1 tablespoon adobo sauce from the chipotle can
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste

For the Bowl Base and Toppings:

  • 2 cups cooked white or brown rice or quinoa
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 avocado sliced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely diced
  • 1 cup shredded lettuce
  • ¼ cup cilantro chopped
  • ¼ cup shredded cheese optional
  • Sour cream or lime crema for drizzling
  • Lime wedges for serving

Instructions
 

Marinate the Chicken

  • In a bowl, whisk together olive oil, honey, chopped chipotle peppers, adobo sauce, garlic, lime juice, paprika, cumin, salt, and pepper.
  • Add chicken and coat evenly.
  • Let marinate for at least 30 minutes (or overnight for deeper flavor).

Cook the Chicken

  • Heat a large skillet or grill pan over medium-high heat.
  • Add marinated chicken and cook for 5–7 minutes per side, until fully cooked (internal temp 165°F).
  • Let rest for 5 minutes, then slice or dice.

Prep the Bowl Ingredients

  • While the chicken cooks, prepare the rice and chop your veggies.
  • Warm the black beans and corn if desired.

Assemble the Bowls

  • Start with a base of rice in each bowl.
  • Add sliced honey chipotle chicken.
  • Top with black beans, corn, tomatoes, red onion, avocado, and shredded lettuce.
  • Drizzle with sour cream or lime crema.
  • Garnish with fresh cilantro, cheese, and lime wedges.
