Ingredients
  

  • 1 medium cauliflower head or 4 cups cauliflower florets
  • ½ cup sour cream full-fat for creaminess
  • 2 tablespoons butter unsalted, or more for extra richness
  • 2 cloves garlic minced, optional for added flavor
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon chives optional, for garnish

Instructions
 

Steam the Cauliflower

  • Wash and chop the cauliflower into florets.
  • Steam the cauliflower florets by placing them in a steaming basket over a pot of simmering water for 10-12 minutes. Alternatively, you can microwave the cauliflower in a covered dish with a bit of water for 5-7 minutes until tender.

Drain the Cauliflower

  • After steaming, drain the cauliflower to remove any excess moisture. You want to make sure the cauliflower is not too watery to achieve a smooth mash.

Mash the Cauliflower

  • Place the cauliflower in a large bowl or food processor. Use a potato masher for a more rustic texture, or blend in a food processor or blender for a smooth, creamy consistency.

Add the Sour Cream, Butter, and Garlic

  • Stir in the sour cream and butter. If you're using garlic, sauté the minced garlic in a pan with a bit of butter until fragrant, then add it to the cauliflower mixture. Stir well to combine until the mixture is smooth and creamy.

Season with Salt and Pepper

  • Taste the mashed cauliflower and add salt and pepper to your preference. You can also add more butter or sour cream for extra richness.

Garnish and Serve

  • Transfer the mashed cauliflower to a serving dish. Garnish with chopped chives or other herbs if desired. Serve immediately while warm!
