  • 4 salmon fillets around 6 oz each
  • 2 medium zucchinis sliced into rounds
  • 1 tablespoon olive oil for drizzling
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic minced
  • 1 teaspoon fresh parsley chopped
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon fresh dill chopped
  • Salt and pepper to taste

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Prepare the Salmon: Pat the salmon fillets dry with a paper towel. Drizzle each fillet with olive oil, and season with salt, pepper, lemon juice, and lemon zest. Sprinkle the fresh parsley, thyme, and dill on top of each fillet. Set aside.
  • Prepare the Zucchini: Slice the zucchini into 1/4-inch rounds. In a mixing bowl, toss the zucchini with a drizzle of olive oil, minced garlic, salt, and pepper. Ensure the zucchini is evenly coated.
  • Arrange on the Baking Sheet: Place the seasoned salmon fillets in the center of the prepared baking sheet. Arrange the zucchini rounds around the salmon, making sure they are spread evenly to allow proper roasting.
  • Bake the Dish: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through (it should reach an internal temperature of 145°F or 63°C) and the zucchini is tender with golden edges.
