Ingredients

Main Ingredients:

  • 1 lb lean ground beef 90% lean or higher
  • 1 small onion diced
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced (white or cremini)
  • 3 cups beef broth low sodium preferred
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • 8 oz egg noodles
  • ½ cup sour cream or Greek yogurt for a lighter option
  • 1 tbsp olive oil or butter
  • Salt & black pepper to taste
  • Fresh parsley chopped (for garnish)

Optional Additions:

  • Grated Parmesan cheese Adds extra richness
  • Red pepper flakes For a slight heat kick
  • Spinach or peas A great way to sneak in some greens

Instructions

Step 1: Brown the Beef & Sauté the Veggies

  • Heat olive oil or butter in a large deep skillet or Dutch oven over medium-high heat.
  • Add lean ground beef, season with salt & pepper, and cook until browned, breaking it up with a spoon.
  • Once cooked, remove any excess grease (if needed).
  • Stir in onions, garlic, and mushrooms, and cook for about 5 minutes, until softened and fragrant.

Step 2: Build the Sauce

  • Add Worcestershire sauce, Dijon mustard, and paprika, stirring to coat the beef and mushrooms.
  • Pour in beef broth and bring the mixture to a gentle boil.

Step 3: Cook the Noodles

  • Stir in egg noodles, ensuring they are fully submerged in the liquid.
  • Reduce heat to a simmer, cover, and cook for 8-10 minutes, stirring occasionally until the noodles are tender and most of the liquid has been absorbed.

Step 4: Make It Creamy

  • Remove from heat and stir in sour cream (or Greek yogurt) until smooth and creamy.
  • Taste and adjust seasoning with more salt & pepper if needed.

Step 5: Serve & Enjoy!

  • Garnish with fresh parsley and serve warm.
  • For an extra touch, sprinkle with Parmesan cheese before serving.
