Ingredients
  

  • ½ cup unsalted butter melted
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract adjust to taste
  • cup cocoa powder
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup chocolate chips optional for extra richness
  • ¼ cup crushed peppermint candies or candy canes for garnish

Prepare Your Baking Area

  • Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners for easy removal.
  • Set out all ingredients to ensure a smooth baking process.

Mix the Batter

  • In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth.
  • Add in the eggs, vanilla extract, and peppermint extract, then mix well.
  • Sift in the cocoa powder, flour, salt, and baking powder, folding until just combined. Avoid overmixing, as this can make the brownies less fudgy.
  • For an extra touch of richness, fold in the chocolate chips.

Bake

  • Spoon the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.
  • Bake for 12-15 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay, as they’ll firm up as they cool).
  • Allow the brownie bites to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.

Notes

Optional Substitutions:
  • For a gluten-free option, swap the all-purpose flour with a gluten-free blend.
  • To make these vegan, replace the eggs with a flaxseed or chia seed egg substitute, and use a dairy-free butter alternative.
