Prepare Your Baking Area
Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners for easy removal.
Set out all ingredients to ensure a smooth baking process.
Mix the Batter
In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth.
Add in the eggs, vanilla extract, and peppermint extract, then mix well.
Sift in the cocoa powder, flour, salt, and baking powder, folding until just combined. Avoid overmixing, as this can make the brownies less fudgy.
For an extra touch of richness, fold in the chocolate chips.
Bake
Spoon the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay, as they’ll firm up as they cool).
Allow the brownie bites to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
