Ingredients
  

  • 1 pound smoked sausage or kielbasa sliced into 1/2-inch rounds
  • 1 pound baby red potatoes quartered
  • 1 pound fresh green beans trimmed and halved
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • ¼ cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese optional

Instructions
 

  • Preheat Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare Ingredients:
    In a large mixing bowl, combine the sliced sausage, quartered potatoes, green beans, and sliced onion.
    Add the minced garlic, olive oil, smoked paprika, dried thyme, dried rosemary, salt, and pepper. Toss everything together until evenly coated.
  • Assemble Casserole:
    Transfer the mixture to a large baking dish or casserole dish, spreading it out evenly.
  • Bake:
    Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
    After 30 minutes, remove the foil, stir the ingredients, and bake uncovered for an additional 15-20 minutes, or until the potatoes are tender and the sausage is browned.
  • Optional Cheese Topping:
    If using cheese, sprinkle the shredded cheddar cheese over the top of the casserole during the last 5 minutes of baking, allowing it to melt and become bubbly.
  • Serve:
    Remove from the oven and let it cool slightly before serving.

Notes

Adding Extra Flavor
For an extra burst of flavor, consider adding minced garlic, diced onions, or a sprinkle of your favorite herbs and spices. A little bit of thyme or rosemary can go a long way in enhancing the dish's overall taste.
