Ingredients
  

  • 1 lb 450g sausage links (such as Italian, chicken, or your preferred type), sliced into 1/2-inch rounds
  • 1 lb 450g baby potatoes (or regular potatoes, cut into 1-inch cubes)
  • 1 red bell pepper cut into bite-sized pieces
  • 1 yellow bell pepper cut into bite-sized pieces
  • 1 medium red onion cut into wedges
  • 1 cup broccoli florets
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Vegetables and Sausage:
    In a large bowl, combine the potatoes, bell peppers, red onion, and broccoli.
    Add the sliced sausage to the bowl.
  • Season:
    Drizzle the olive oil over the sausage and vegetables.
    Sprinkle with garlic powder, onion powder, dried oregano, dried thyme, paprika, salt, and black pepper.
    Toss everything together until well-coated with the oil and seasonings.
  • Arrange on the Sheet Pan:
    Spread the seasoned mixture evenly on a large sheet pan. Make sure the ingredients are in a single layer to ensure even cooking.
  • Roast:
    Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the potatoes are tender and golden brown, and the sausage is cooked through. You may want to stir the mixture halfway through cooking for even browning.
  • Garnish and Serve:
    Remove from the oven and garnish with fresh parsley, if desired.
    Serve hot, directly from the sheet pan or transfer to individual plates.
