Ingredients
  

For the Shortcakes:

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cut into small pieces
  • cup milk
  • 1 teaspoon vanilla extract

For the Strawberries:

  • 1 pound fresh strawberries hulled and sliced
  • ¼ cup granulated sugar adjust to taste
  • 1 teaspoon lemon juice

For the Whipped Cream:

  • 1 cup heavy cream chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Prepare the Shortcakes:
    In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
    In a separate bowl, mix together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
    Turn the dough out onto a floured surface and pat it into a 3/4-inch thick rectangle. Use a round biscuit cutter to cut out shortcakes and place them on the prepared baking sheet.
    Bake for 12-15 minutes or until the tops are golden brown. Allow the shortcakes to cool completely.
  • Prepare the Strawberries:
    In a bowl, combine the sliced strawberries, granulated sugar (adjust to taste), and lemon juice. Toss the strawberries gently and let them sit for about 15-20 minutes to release their juices.
  • Make the Whipped Cream:
    In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Assemble the Strawberry Shortcakes:
    Slice each shortcake horizontally. Spoon a generous portion of macerated strawberries onto the bottom half.
    Add a dollop of whipped cream over the strawberries.
    Place the other half of the shortcake on top.
    Optionally, garnish with additional whipped cream and a strawberry on top.
  • Serve and Enjoy:
