Ingredients
  

  • 1 flatbread or pizza dough
  • 2-3 ripe peaches
  • 4 oz prosciutto
  • 4 oz fresh mozzarella
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Fresh basil leaves
  • Balsamic glaze optional

Instructions
 

  • Prepare the grill:
    Preheat your grill to medium-high heat (about 400°F/200°C).
  • Prepare the flatbread:
    If using homemade dough, roll it out thinly.
    Brush one side with olive oil.
    Grill for 1-2 minutes until lightly marked.
    Remove from grill, brush the other side with oil, and set aside.
  • Prepare the peaches:
    Wash and slice peaches into 1/4 inch wedges.
    Lightly brush with olive oil.
    Grill for 2-3 minutes per side until marked and slightly softened.
    Remove from grill and set aside.
  • Assemble the flatbread:
    Place the pre-grilled flatbread on a clean surface, grilled side down.
    Tear mozzarella into pieces and distribute evenly over the flatbread.
    Arrange grilled peach slices on top of the cheese.
    Tear prosciutto into smaller pieces and place over the peaches.
    Drizzle with honey.
  • Grill the assembled flatbread:
    Carefully transfer the assembled flatbread back to the grill.
    Close the grill lid and cook for 5-7 minutes, or until the cheese is melted and the edges are crispy.
  • Finish and serve:
    Remove the flatbread from the grill.
    Garnish with fresh basil leaves.
    Drizzle with balsamic glaze if desired.
    Slice and serve immediately.
