Ingredients Youโ€™ll Need

For the Maple Dijon Glaze:

  • 1/4 cup maple syrup (for natural sweetness)
  • 2 tbsp Dijon mustard (adds a tangy depth)
  • 2 cloves garlic, minced (for aromatic flavor)
  • 2 tbsp olive oil (helps caramelization)
  • 1 tbsp soy sauce (balances the sweetness)
  • 1 tbsp lemon juice (brightens the flavors)
  • Salt & black pepper to taste

For the Sheet Pan Salmon & Sweet Potatoes:

  • 4 fresh salmon fillets
  • 2 medium sweet potatoes, diced
  • 1 red onion, sliced (optional, for extra flavor)
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Fresh thyme or rosemary (optional, for added aroma)

Step-by-Step Instructions

Step 1: Prep the Sweet Potatoes

Start by preheating your oven to 400ยฐF (200ยฐC). While the oven is heating, dice your sweet potatoes into bite-sized pieces and toss them with olive oil, salt, and pepper.

Spread the sweet potatoes on a sheet pan in a single layer and roast them for 15 minutes before adding the salmon. This ensures they start to soften and caramelize.

Step 2: Make the Maple Dijon Glaze

In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, olive oil, soy sauce, lemon juice, salt, and pepper. This sweet and tangy glaze is what will give your salmon its beautiful flavor!

Step 3: Add Salmon to the Pan

After the sweet potatoes have roasted for 15 minutes, move them to one side of the sheet pan to make room for the salmon. Place the salmon fillets on the other side of the sheet pan and brush them generously with the maple Dijon glaze.

Step 4: Roast Everything Together

Return the sheet pan to the oven and roast for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. If you like your salmon with a slightly crispy, caramelized top, you can broil the sheet pan for 1-2 minutes at the end of the cooking time.

Step 5: Serve & Enjoy!

Once the salmon is ready, remove the sheet pan from the oven. Garnish the salmon and sweet potatoes with fresh herbs like thyme or rosemary, and a squeeze of lemon juice for added brightness. Serve immediately and enjoy this delicious and healthy meal!

Tips for the Best Maple Dijon Salmon

  • Use fresh salmon for the best texture and flavor. Frozen salmon can work, but fresh is always ideal for this recipe.
  • Cut sweet potatoes evenly to ensure they roast uniformly. If some pieces are much larger than others, they may not cook at the same rate.
  • Donโ€™t skip broiling โ€“ it adds a beautiful caramelized glaze to the salmon and gives it a wonderful crispy texture.
  • Add extra veggies โ€“ Try adding Brussels sprouts, asparagus, or even sliced bell peppers for more color and nutrients.

What to Serve with Maple Dijon Salmon

If you want to make this meal even more filling, here are some side dishes that pair wonderfully with maple Dijon salmon and sweet potatoes:

  • Steamed or roasted Brussels sprouts โ€“ Their slight bitterness balances the sweetness of the salmon.
  • A simple mixed greens salad โ€“ Light, refreshing, and perfect to cut through the richness of the salmon. Click here to find more salad recipes.
  • Quinoa or brown rice โ€“ Add some hearty grains for a more filling meal.
  • Garlic butter asparagus โ€“ A great veggie side that complements the flavors perfectly.

Storage & Meal Prep Tips

This recipe works wonderfully for meal prep, and leftovers can be stored for easy lunches or dinners.

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the oven at 350ยฐF (175ยฐC) for about 10 minutes or microwave in 30-second bursts, though the oven method will preserve the texture of the salmon better.
  • Make ahead by prepping the glaze and chopping sweet potatoes in advance. You can even marinate the salmon for an hour or two before cooking for extra flavor!

This is one of the best salmon recipes I’ve found in a long time! I’m adding it to my regular meal rotation. The glaze is an absolutely perfect marriage of ingredients (NB: I didn’t add any additional salt or pepper. I tasted the glaze before that step and found it perfect as-is. And I even used low-sodium soy sauce). Since it’s autumn, I also added half a cubed acorn squash to the potatoes (they roast at/for the same temp/time). Lastly, even though I only cooked 2 salmon filets and I halved the glaze recipe, there was plenty of glaze left over after glazing the salmon, so I tossed the sweet potato and squash with a tbsp or two as well. Not too much, bc I didn’t want it to burn. So just a slight coating. Turned the potatoes and squash after their first 15 min to get even roasting and caramelization. And wow. Everything turned out perfectly! Drizzled the leftover glaze on everything at the table.
